This paste is an easy way to cook an authentic Thai Red Curry (Gaeng Ped/Gaeng Dang). Just add coconut milk, meat of your choice (chicken, beef, duck or prawns), desired vegetables (young aubergine, pea aubergine, bamboo shoots, peppers, etc.) and season according to taste.
